Maple Spice Latte
We love fall: crunchy leaves, warm afternoons, nature puts on a show with the brilliant colors in the trees, and, of course, warm spices. This recipe is best enjoyed in a hoodie and in front of a fire, rainy day optional.
Ingredients:
18g Civic Roasters coffee
85g hot water
2 tsp maple syrup
1/4 cinnamon stick
2 cardamom pods
pinch of cloves
pinch of nutmeg
6oz milk or milk alternative
Directions:
Toast 1/4 cinnamon stick and 2 cardamom pods in a small pan on medium until fragrant. Watch carefully, it’ll go quick! Immediately transfer to a mortar and pestle and grind spices down. While you will only use a pinch of these spices, you can set these aside and use for another latte.
Add 2 tsp maple syrup to a mug. Add a pinch of the toasted spices. Add a small pinch of cloves. Add a small pinch of nutmeg.
Brew 18g Civic Roasters coffee (we love our Colombia Decaf for this recipe in the afternoons) with 96g hot water in an aeropress. Aeropress instructions: Start by grinding 18g coffee to medium fine, and pour into an inverted aeropress (place the plunger inside the main chamber of the aeropress on the bottom, forming a seal with the open side facing up). Slowly pour 50g hot water at approximately 195º (about 30s after it boils if you don’t have a thermometer in your kettle) over the grounds. Carefully swirl the aeropress to ensure all grounds are incorporated. Wait 30 seconds. Continue pouring the remainder 35g water. Wait 1 minute. Attach the aeropress cap with a pre-wet filter. Tilt the aeropress to a 45º angle and rotate a couple times to swirl the coffee. Invert onto the mug with the maple syrup and the spices, and plunge until you hear a hiss. Pour entire maple spice coffee mixture through a fine mesh sieve into a final mug.
Heat up 6oz milk (we prefer oat milk), with a steam wand or in a frother. If you don’t have either, warm up the milk on the stovetop or in a microwave, then use a whisk to froth the milk, or pour milk into a french press and plunge with the lid on until reaching desired frothiness.
Pour milk over maple spice coffee.
